Oxtail is the culinary name for the tail of cattle. We cut the tail into short lengths, package, and freeze them. Each package ranges from 1.75 lb to 2.5 lb. This cut of meat is great in soups or alongside roasts. We recommend seasoning and searing the tail prior to cooking it "low and slow."
